The Chow Mein recipe is a classic in any Chinese restaurant, combining Chinese noodles with meats, seafood, and vegetables. It is accompanied by sauces such as oyster or soy sauce. There is not a single recipe of Chow Mein, as it is prepared differently in each region of China. If you like Chinese food recipes you are going to love this one.

The word Chow Mein comes from the city of Taishan, located in the Guangdong or Pearl River delta, southwest of Jiangmen. From Taishan, it spread to other areas of China. In Hong Kong, they fried the pasta after cooking, while in other places, they preferred steaming it.

Chow Mein crossed borders thanks to Chinese immigration, reaching India and the Philippines, where a recipe called ‘pancit’ is prepared. In the United States, this recipe was a success, becoming a typical dish on Chinese restaurant menus. It is prepared steamed or Hong Kong-style.

Ingredients

  • Chow Mein noodles – 300 g
  • Grated carrot – ½ unit
  • Broccoli – 5 sprigs
  • Garlic cloves – 2 units
  • Fresh spring onion – 1 unit
  • Chinese cabbage – 100 g
  • Red pepper – ½ unit
  • Sunflower oil – 60 ml
  • Water – 375 ml

For the beef

  • Beef fillets – 180 g
  • Oyster sauce – 2 teaspoons
  • Black pepper – ¼ teaspoon
  • Curry – ½ teaspoon
  • Cornstarch – ¼ teaspoon
  • Shaoxing wine (or substitute it with dry Sherry) – 1 tablespoon

For the sauce

  • Water – 1 tablespoon
  • Oyster sauce – 2 teaspoons
  • Soy sauce – 2 teaspoons

Instructions

  1. Cut the beef into pieces, in a container combine the oyster sauce, Shaoxing wine (or Sherry if you can’t find it), cornstarch, and curry. Mix and let the meat marinate for fifteen minutes.
  2. Meanwhile, cut 5 broccoli sprigs. Wash and drain. Grate the carrots and cut the spring onion, red pepper, and Chinese cabbage into pieces.
  3. First, place the broccoli in a microwave-safe container, cover with plastic wrap and set for 4 minutes.
  4. When half the time has passed (2 minutes), open the microwave and add the grated carrot, Chinese cabbage, and spring onion. Cook for another two minutes. Turn off the microwave and let it settle.
  5. To prepare the chow mein sauce, it’s straightforward: combine the oyster sauce, soy sauce, and water. You can easily find oyster sauce in supermarkets like Alcampo or Carrefour.
  6. In a wok or large frying pan, add sunflower oil. When it is hot, add the large pieces of garlic and sauté for two minutes.
  7. Remove from the pan. Then add the marinated beef.
  8. Let it brown for 1.5 minutes per side. Add the vegetables we cooked earlier in the microwave.
  9. Add the noodles and water, cover the wok or pan with a lid. Cook for 3 to 5 minutes or until the noodles are to your liking.
  10. Add the oyster and soy sauce we made in step 3 and mix.

Notes

You can also marinate the meat with a little soy sauce and spices to give it more flavor.

Cut the ingredients into small pieces: Cut all the vegetables into small and uniform pieces so that they cook evenly. You can cut them julienne-style or into cubes, according to your preferences.

Optional: If you want to add an extra touch of flavor, you can incorporate other ingredients such as shrimp, tofu, or bean sprouts. You can also sprinkle some freshly chopped chives on top before serving.
