For the filling:

How to make the recipe Healthy Crepes with Oatmeal Flour
- The first thing we'll do is separate the egg whites. To do this, you just have to very carefully open the egg in half and pass the yolk from one half to another. So that the white falls into the bowl where we will make the mixture.
- And here comes the trick. If you drop a piece of eggshell, a very useful trick to remove it without problems is to take a piece of eggshell and with this, you can remove it. Did you see how easy that was? I hope it helps. Let's continue with the steps.
- Next, we add the milk, the cinnamon, and finally, the flour. But we're going to add this little by little, while stirring with the whisk to prevent lumps.
- You can use a mixer, but by hand is more than enough, but beat energetically, because the more diluted the batter is, the better it will be when making our crepes.
- We put a frying pan as wide as possible to heat, add a little oil or butter or margarine. And when it's hot we pour in a bit of the batter we've prepared.
- We must distribute this mixture well across the pan and check often to prevent it from burning on the bottom.
- A good way to know when the inside is ready is when the top changes color and small bubbles start to appear. Then, with the help of a spatula, you can easily flip it. We'll keep it on the pan for a very short time and take it out to the plate where it will wait for the other crepes.
- We repeat the process until we finish with the batter. We got 4 or 5 crepes. It's true that we used a very wide pan, so if you use a smaller one you will have more units.
- To decorate our crepe and filling, we used some strawberries and then, you can add a little honey or any natural syrup. The result as you can see, is incredibly tasty.
