How to avoid ice crystals in the ice cream?
You don't need an ice cream maker. To achieve creamy ice cream, the key is in the ingredients. If they are liquid-based like milk or juices, the ice cream will almost certainly have ice crystals. On the other hand, if they have a higher fat base, like cream, egg yolks, or coconut milk, the ice cream will be creamier and less likely to form crystals. Another advantage of ice cream with a higher fat base is that you don't have to 'stir' them from time to time. Being a cream, just let them freeze and then take them out of the freezer a bit earlier. Your ice cream will be ready to consume.
If your ice cream has a liquid-like texture before freezing, it will surely form ice crystals. That's why you should always use creamy ingredients. If you're vegan, you have alternatives in coconut milk and vegetable cream, which you can find in large supermarkets. Next, we'll share a recipe that you'll surely want to make again.
Ingredients for Homemade Strawberry Ice Cream for 4 people
- Strawberries - 500 g
- Egg yolks – 3 units
- Sugar – 125 g
- Cold liquid whipping cream – 250 ml
How to make the recipe Homemade Strawberry Ice Cream
- Begin by adding the egg yolks to a bowl or salad bowl and beat them with a whisk. Meanwhile, in a saucepan, heat water, as we will beat the egg yolks in a 'bain-marie', which is very simple.
- The saucepan should be smaller than the salad bowl. When the water in the saucepan boils, place the salad bowl with the yolks on top of the saucepan.
- Add sugar and continue beating with the whisk, be patient as we will have to beat for 3 to 5 minutes. When you notice the yolks have a pale yellow color and a slightly creamy texture, we have the right texture. Allow it to cool.
- On the other hand, wash the strawberries in a container with a little water and a few drops of vinegar, and drain them well.
- Cut into small pieces and blend with a mixer until you achieve a puree-like consistency. Also, set aside this strawberry puree for later.
- Now let's whip the cream. We need it to be quite cold since it will be easier to whip. Add it to a container and whip it with a whisk or mixer. When the cream is quite dense and forms peaks, we have the desired texture.
- Now we just need to pour the cooled egg yolk mixture into the whipped cream. Work this mixture, it is the base of the ice cream and is very creamy due to the fatty ingredients like cream. This ensures that it is more difficult for ice crystals to form when freezing.
- Now add the strawberry puree to the previous mixture and mix until the ingredients are well combined. When it is properly mixed, it will have a creamy texture. If it were liquid, it wouldn't be ice cream, it would be a popsicle!
- Pour the strawberry ice cream mixture into a container made of glass or even better if you have a metal container as they cool faster. Place in the freezer for 4 hours.
- To serve, take it out at least 10 minutes before to have it at room temperature. Or microwave it at the highest setting for 1 minute and let it settle for 5 minutes. And just like that your homemade strawberry ice cream is ready!
