Ingredients for Baked Sweet Potato with Vegetables for 3 people

For the sweet potatoes:

  • Sweet Potato - 1 large piece
  • Carrots - 3 pieces
  • Zucchini - 1 piece
  • Green pepper - 1 piece
  • Broccoli - 1 large head
  • Olive oil - 2 to 3 tablespoons

For the spice mix:

  • Smoked paprika - 1 piece
  • Thyme - to taste
  • Cayenne pepper - to taste
  • Oregano - to taste
  • Salt - to taste
  • White pepper powder - to taste

How to make the recipe Baked Sweet Potato with Vegetables

  1. The first thing we will do is peel and dice our main ingredient of this recipe: the sweet potato.
  2. Then we slice the carrots more or less thick.
  3. We will also dice the zucchini.
  4. And the green pepper couldn't be less. We remove the stem and seeds and cut it into squares. And finally, we just have to cut the broccoli.
  5. Now it will be the turn of the spices for this recipe. We take a medium bowl and pour all the spices together into it. These are smoked paprika, thyme, garlic powder, cayenne pepper, oregano, salt, and white pepper powder. And we mix it with a spoon.
  6. Now we will prepare two baking dishes since we are going to put the ingredients in separately.
  7. On the one hand, we will prepare a tray with a drizzle of extra virgin olive oil and spread it out so that it does not stick.
  8. Now we put the sweet potato and carrot in and add some of the spice mixture we prepared earlier. And we mix everything with our hands to distribute them well.
  9. On the other hand, we prepare another tray with a drizzle of extra virgin olive oil and also spread it out.
  10. And we put in this tray the rest of the vegetables. These are the zucchini, the green pepper, and the broccoli.
  11. We pour the rest of the spice mixture that we had left over them. And we also stir it with our hands to distribute it well.
  12. And all we have left is to put it in the oven.
  13. For this, the oven must be previously preheated to 355ºF.
  14. We will first put the tray with the sweet potato in for 10 minutes. And once that time has passed and without removing the sweet potato from the oven, we also put the other tray with the vegetables in for about 20 minutes. This is because the sweet potato takes longer to bake.
