Hello, Foodies! Today we want to surprise you with a new banana muffin recipe that you're going to love. It's very easy to make and won't take you more than 5 minutes, as we'll use the microwave to prepare it.

In our dessert recipes, you'll find delicious and original ideas to prepare at home. You'll see that they are also very simple and varied, with or without fruit, sweet and even savory, like this apple pie that you can share with whomever you like.

If you don't have time to turn on the oven but you fancy muffins, we propose making them in the microwave. They won't have the original shape but they will be just as tasty and fluffy.

We've chosen to make banana muffins because it's one of the most consumed fruits in the world, for its multiple properties and because it's not seasonal. This means that we can eat it any month of the year. In Spain, we mainly consume bananas from the Canary Islands, which were granted the Protected Geographical Identification (PGI) seal in 2013, as they are a unique and quality product. These are grown in six of the seven Canary Islands: Tenerife, La Palma, Gran Canaria, El Hierro, La Gomera, and Lanzarote.

In addition, the banana is a climacteric fruit, which means that it continues to ripen after being harvested. So you can buy green bananas and let them ripen at home until they are to your liking. If you have any that you think are overripe, use them to make muffins. Here's how.

Ingredients for Banana Muffin for 1 person

  • Egg white - 1 unit
  • Banana - Half a unit
  • Honey - 2 large tablespoons
  • Flour - A quarter cup
  • Cinnamon - Half a small spoon
  • Baking powder - Half a small spoon

How to make the recipe Banana Muffin

  1. Before starting the preparation, we must choose a container that can withstand the heat of the microwave. We're going to make it in a cup. In it, we'll pour the egg white, carefully separating it from the yolk.
  2. Next, we'll add the two large tablespoons of honey and stir and mix everything very well with the help of a fork. Now it's time for the half small spoon of cinnamon, the half spoon of baking powder and the quarter cup of oat flour (or the one you prefer). Stir everything again for a while, until the mixture is homogeneous.
  3. We cut half a banana into slices and add it to the mixture of ingredients. We mix it one last time and now take it to the microwave, where we'll leave it for 60 seconds at maximum power. Finally, we can decorate it with icing sugar, with chocolate shavings, with cinnamon, with cream, with chia or with whatever we like the most.
