The history of beef broth dates back to pre-Hispanic times, when the inhabitants of Mexico used beef bones and meat to prepare a nutritious broth. During the colonial period, the recipe was enriched with the addition of ingredients such as carrots, chayote, corn, and potatoes, among others. Since then, beef broth has become one of the most beloved and consumed dishes in Mexico and around the world.

Ingredients for Beef Broth for 2 people
- 1 large onion
- 2 cloves of garlic
- 1 large carrot
- 1 stalk of celery
- 1 chayote
- 1 cob of corn
- 2 potatoes
- 1 tablespoon of salt
- 1/2 tablespoon of ground black pepper
- 1/2 tablespoon of ground cumin
- 1 liter of water
How to make the recipe Beef Broth
- Start by cutting the onion into quarters, the garlic cloves into two halves, and the carrot into thick slices. Set it aside.
- In a large pot, place the beef and cover it with the liter of water. Add the onion, garlic cloves, carrot, and celery stalk. Bring it to a high heat and let it boil for 10 minutes
- After 10 minutes, reduce the heat to medium-low and remove the foam that has formed on the surface of the broth. Add the salt, pepper, and cumin. Let it cook for 1 hour and 30 minutes.

- In the meantime, peel and cut the potatoes into medium cubes, cut the chayote into medium squares, and remove the leaves and silk from the corn. Cut it into three equal parts. Set it aside as well.
- After an hour and a half of cooking the meat, add the potatoes, chayote, and corn to the pot. Let it cook for another 30 minutes or until the potatoes are soft.
- Finally, taste the broth to adjust the seasoning and serve it hot. If desired, you can add some chopped fresh cilantro leaves on top to give it a touch of flavor and color.
Notes and Tips
Remove the foam. During the cooking of the beef broth, it is normal for foam to form on the surface. It is important to remove the foam with a spoon to obtain a cleaner and clearer broth.
Adjust the seasoning. Salt, pepper, and cumin are the basic seasonings for beef broth, but make sure to adjust the amount of salt and spices to taste. Taste the broth from time to time and add more salt or spices only if necessary.
Let it cook slowly. The beef broth should be cooked slowly so that the meat and vegetables cook slowly and release all their flavor and nutrients. Don't rush and let the broth cook long enough to obtain an intense and concentrated flavor.
