Hello Foodies! Imagine a salad of crispy baked potatoes, mixed with a delicious green sprout salad and topped with Modena and mustard vinaigrette. You're going to love it! Today we are going to prepare: Green Salad with Baked Potatoes.

Ingredients for Green Salad with Baked Potatoes for 2 people

  • Potatoes - 2 pieces
  • Thyme - 3 sprigs
  • Favorite green leaves - 2 or 3 cups
  • Walnuts - 1/3 cup
  • Extra Virgin Olive Oil - 2 or 3 tablespoons
  • Modena Vinegar - 1/2 tablespoon
  • Dijon Mustard - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

How to make the recipe Green Salad with Baked Potatoes

  1. The first thing we will do is cut the potatoes into medium cubes.
  2. In a bowl we mix the olive oil, thyme, salt and pepper.
  3. On a baking tray we put nonstick paper.
  4. We add the potatoes and on top of these the dressing that we have prepared before and mix everything very well.
  5. We are going to bake this for 20 minutes. In an oven that should be preheated to 190° C or 375° F.
  6. After baking them, we let the potatoes cool until they are lukewarm and while we prepare the salad.
  7. To make the vinaigrette we will combine all the ingredients in a bowl and mix them. These are: extra virgin olive oil, Modena vinegar, Dijon mustard and salt and pepper to taste.
  8. To assemble the salad, what we will do is serve the potatoes in the center.
  9. Then we add the green leaves, chop some walnuts and add them to the center.
  10. And finally, we pour the dressing. All that's left is to serve and enjoy!
