Hello Foodies! Did you know that it's possible to have delicious muffins that are healthy and low in calories? Well, today we bring you the recipe for: Healthy Raspberry Muffins.

This recipe is sweetened with panela. Panela is a 100% natural product, so it is considered as the authentic whole cane sugar. Its only ingredient is sugarcane juice. And that is the reason why it is such a healthy and natural product.

Ingredients for Healthy Raspberry Muffins for 4 people

  • Soft oats - 1 cup (this just means it's slightly ground)
  • Ground oats - 1 and 1/2 cup
  • Raspberries - 1 cup
  • Vegetable milk - 1/2 cup
  • Honey - 1/2 cup
  • Panela - 1/2 cup (this is unprocessed natural cane sugar)
  • Olive oil or coconut oil - 1 large tablespoon
  • Vanilla extract - 1 large tablespoon
  • Baking soda - 1/2 tablespoon
  • Salt - 1/2 small tablespoon
  • Yeast or baking powder - 2 tablespoons
  • Eggs - 2 pieces

How to make the recipe Healthy Raspberry Muffins

  1. The first thing we'll do is mix all the liquid ingredients. First we put the 2 eggs in a bowl and beat them.
  2. Then we add the milk, the vanilla essence, the honey and the oil. And we mix everything very well.
  3. The next step is to mix in a large bowl the solid ingredients. These are the salt, the yeast, the baking soda, the panela, the soft oats and the ground oats. And we mix everything with the help of a fork.
  4. Now we incorporate the mixture of liquid ingredients that we have previously made. We add lastly the star ingredient which are the raspberries and mix it again
  5. We're going to use a special oven tray for muffins. And we're going to impregnate it with olive oil or some other oil to prevent sticking.
  6. With the help of a ladle or a spoon we pour our mixture into the holes of the tray.
  7. To decorate it we add a handful of oat flakes. And as a final touch to our muffins, we put a raspberry on top to make them look phenomenal.
  8. Finally, we put it in the oven for 20 minutes. The oven should be preheated to 190° C or 375° F.
