How to make the recipe Oven Baked Eggplant with Cheese

  1. Start by washing the vegetables, the eggplants, the tomatoes under the tap, and let it drain in a colander. Remove the tips from the eggplants with a knife and cut them into slices, about a finger thick, approximately.
  2. Remove the skin from the tomatoes and cut them into small pieces. Reserve it. Peel the spring onion and cut it into small pieces. Reserve it once again. Peel the garlic and chop it into small pieces, mix it in a bowl with the basil and oil. Stir it and set it aside.
  3. In a wide source or in the oven tray, place the slices of eggplants and with the help of a brush, paint the top, with the mixture of garlic, basil, and oil.
  4. Carefully distribute the tomato and onion in the center of each slice, and with the help of a spoon, distribute it over the entire surface. Then, season to taste.
  5. Preheat the oven to a temperature of 356º degrees, with heat up and down for 05 minutes. Then place the tray and insert it to bake for 10 minutes.
  6. After the indicated time, take it out of the oven and add a generous layer of grated cheese all over the surface (here the choice of cheese will depend on preferences). Put it back in the oven to gratinate it for 10 more minutes.
  7. Take the tray out of the oven and before it cools down, with a spatula serve some portions of eggplants with gratin cheese on a plate. You already have our delicious Oven Baked Eggplant with Cheese ready to enjoy, this dish serves us as a starter or as a side dish.

Notes and Tips

If you are one of the people who notice the bitterness that eggplants usually have in excess, don't worry, this trick is infallible, to remove it is very simple, cut the eggplant, place it in a source and add a touch of salt on top and cover them. Leave them to rest for 1/2 hour, to release the juice. You only have to throw away the juice and continue with the recipe, not forgetting not to add more salt.

Personally, I really enjoy Baked Eggplant with Cheese, accompanying them, depending on the occasion, with meat or fish, here I leave you the links in case you need to refresh their preparation: grilled meat or the wonderful grilled hake fillet.
