Oyster sauce is traditional in many Chinese dishes and other Asian countries. Its creamy texture pairs well with vegetables, rice, or Chinese noodles. This sauce was created by Lee Kum Sheung in 1888 in the Guangdong province of China. The recipe emerged accidentally when he simmered oysters and forgot about them. The result was a brown sauce with a creamy texture and intensified flavor. He began selling his sauce, which quickly became a success.  On this website, we will show you how to prepare oyster sauce.

This recipe is for gourmet tastes. You can find bottled oyster sauce for 2.81 dollars. However, if you want an authentic sauce, you'll need to use natural oysters. A box of 12 oysters typically costs between 8.98 to 14,59 dollars. Thus, making homemade oyster sauce is five times more expensive than buying it. But the homemade flavor is far superior and contains no preservatives or colorants! We also offer a more economical version of homemade oyster sauce.

Ingredients for Oyster Sauce for 4 servings

Homemade Oyster Sauce

  • Natural oysters – 12 units
  • Water – 400 ml
  • Soy sauce – 2 tablespoons
  • Sugar – 1 teaspoon

Economical Oyster Sauce Version

  • Natural canned clams – 2 cans of 63g
  • Water – 90 ml
  • Soy sauce – 2 tablespoons
  • Sugar – 1 teaspoon

How to make the recipe Oyster Sauce

  1. Homemade Preparation

Open the oysters and save all the liquid in a container. Combine the liquid, oysters, and 400 ml of water in a pot. Bring to a slow boil and cook for 20 minutes. Turn off the heat and strain the resulting liquid. Blend the oysters with the strained liquid, sugar, and soy sauce until it is smooth. Pass the sauce through a fine sieve for a finer result.
  2. Economical Preparation

This version has a rich marine flavor, but instead of oysters, we use canned natural clams. A 63g can of natural clams costs approximately 1.68 dollars, as opposed to the average cost of 8-14 dollars for a dozen natural oysters. Open the cans and save all the liquid. Add the can liquid and water to a blender-ready glass. Chop the clams and add them to the other ingredients. Blend until smooth. Strain the mixture through a fine sieve for a finer texture. Add soy sauce and sugar to the blended mixture and stir until fully combined.

Notes and Tips

This sauce can also be made by substituting soy sauce with teriyaki sauce. Did you like the recipe?
