Hello, foodies! Today, at noon, I prepared a Watermelon and Fresh Cheese Salad and I want to share it with you as it's one of my favorite salads this season. It's very refreshing, ideal for spring-summer and has the great advantage of being super quick to prepare.

Watermelon is a fruit with many nutritional benefits. Among them, it's rich in numerous vitamins, antioxidants, has diuretic properties, anti-inflammatory properties, is a natural painkiller, and is highly hydrating.

It is low in fat due to its high water content, making it an ideal fruit for weight loss diets, therefore, it's always a total win to include it often in our diet.

In short, this salad is exquisite, it doesn't require many ingredients, it's healthy, delicious and perfect to prepare, especially when we only have a few minutes.

Ingredients for Watermelon and Fresh Cheese Salad for 2 people

  • Watermelon - 300 grams
  • Fresh cheese - 150 grams
  • Raisins - 100 grams
  • Pine nuts - 50 grams
  • Toasted sesame seeds - 1 pinch
  • Fresh basil - 1 pinch
  • Balsamic vinegar - 1 pinch

How to make the recipe Watermelon and Fresh Cheese Salad

  1. Start by removing all the seeds from the watermelon, take off the skin (the reference is just where the white part begins) and cut it into small pieces. Let it drain for a while. While it drains, prepare the rest of the ingredients.
  2. Now it's the fresh cheese's turn, cut it into small cubes and set it aside.
  3. Wash the basil and dry it well with absorbent paper. Using a knife, chop it finely and set it aside.
  4. Now, plate everything in this order, on individual plates (preferably): place the chopped watermelon first, then the fresh cheese in cubes, the raisins, the pine nuts, the chopped basil, and finally, the toasted sesame seeds.
  5. Just before serving our Watermelon and Cheese Salad, add a splash of balsamic vinegar on top.
  6. Now all that's left is to enjoy it...

Notes and Tips

You can enjoy the Watermelon and Fresh Cheese Salad without adding vinegar, but for my taste, adding just a splash of Modena vinegar (my favorite for this recipe) will intensify the flavors without taking away from the quality of the other ingredients.

The same goes for the fresh cheese, it adds softness to the dish, without breaking the balance of the other flavors.

I advise you not to add any type of oil as it would mark the dish too much, and it would lose much of its charm.

If you don't like or don't have fresh basil on hand, you can always substitute it, no problem, as fresh mint also goes very well with this dish.

You can't always find pine nuts in our usual stores, in this case, you can substitute them with pieces of walnuts or natural almonds.

It is advisable to prepare it just when you are going to consume it, this will prevent the watermelon from releasing too much water and ruining the salad, also, it is not necessary since you will have it ready in a jiffy.
