Ingredients for Whole Wheat Caprese Pasta Salad for 2 people

  • Dry pasta - 2 cups (we have used whole grain Farfalle as they are healthier, but you can use your favorite pasta)
  • Cheese - 1/2 cup
  • Small tomatoes - 3 pieces
  • Chopped fresh basil - 1 handful of leaves
  • Extra virgin olive oil - 2 tablespoons
  • Balsamic vinegar - 1 tablespoon
  • Pasta cooking water - 2 tablespoons
  • Salt - to taste
  • Pepper - to taste

How to make the recipe Whole Wheat Caprese Pasta Salad

  1. The first thing we will do is cut our ingredients. We will cut the cheese into approximately 1 cm cubes. Then, we cut the olives in half. And we also cut the tomato into 4 parts.
  2. Now it's time for the dressing. We have used extra virgin olive oil, Modena balsamic vinegar and we have added a little trick. This is, two tablespoons of pasta cooking water, which will give it more juiciness. And finally, a pinch of salt and pepper to taste. And we stir it very well to create an emulsion of all the ingredients.
  3. The first thing we will do is cook the pasta in boiling water with a little salt. We will cook it until it is al dente or at the cooking point where you like the pasta to be.
  4. The first thing we will do is put the pasta in the center. We will put the tomato around, distribute the olives all over the plate, as well as the cubes of cheese.
  5. And we have also added some fresh basil leaves, directly from the plant, but you can find it already cut in your supermarket or if you don't have it fresh, you can also buy it as a spice.
  6. And finally, we have added the dressing we prepared earlier.
