  • Chicken fat - 50 gr.
  • Chicken carcasses and bones - 1 kg.
  • Olive oil - 100 ml.
  • Onion - 1 unit
  • Leek - 1 unit
  • Carrot - 2 units
  • Salt - 10 gr.
  • Black pepper - 10 gr.
  • Bay leaves - 3 units

How to make the recipe Chicken Soup

  1. We start by heating a stream of extra virgin olive oil in a large and deep casserole. In it we will put, if we have it, a little diced chicken fat to give more flavor to the broth.
  2. When the oil is hot and part of the fat has melted, we throw between 800 grams and one kilo of chopped chicken carcasses and bones. We spread them well on the bottom of the casserole and let them brown without stirring. When they are browned on one side, we stir to brown them on the other side. When they are well browned, remove and reserve.
  3. In the same casserole we throw the vegetables: onion, carrot and leek. Let them brown, when they are, add the chicken carcasses and bones again. Cover with water.
  4. When it's ready, salt and pepper and add some bay leaves. Put it to cook over high heat until it starts to boil and then lower the heat to medium. Let it cook for 2 to 3 hours to get an intense flavor broth.
  5. Every few minutes we must skim the surface of our broth, to remove fats and impurities. That way we will get a completely clean broth. When the cooking time has passed, strain with the help of a strainer or a chinois and we will have our chicken broth ready.
